Jelly Powder:

Jelly Powder/Pudding powder is a compound powder that mainly consists of konjac powder with carrageenan. This jelly powder has the following characteristics:


1. Good transparency, high gel strength;
2. Non-insoluble grains;
3. Good mouth feeling, no bitter taste.

Granulated sugar 18 ~ 25%
Sodium Citrate 0.1 ~0.2%
Citric Acid 0.1 ~0.25%
Essence Proper amount
Pigment Proper amount
Water add up to 100%

 

Method of using jelly powder:

  1. First, mix the jelly powder with partial granulated sugar, then add it into the cold water and agitate evenly;
  2. Heat up the solution up to 80 degree C, and then add the granulated sugar in, and heat the solution to boiling (90 - 100 degree C)with agitate, keep the solution boiling at the same temperature for 5-10min.,
  3. After finished heating, filter the solution with 80-100mesh. By now a good transparent sugar gel should be obtained.
  4. Let the solution cool down to (65 - 75 degree C) and then pour in the Sodium Citrate, Citric Acid, Essence and pigment into the solution. Keep its PH value under 3.7-3.8. After that, pour it into the jelly cups;(add acid in high temperature prohibited)
  5. Pour the solution into the jelly cups and sterilize it for 20-30min. in water and make the center temperature reaches up to 85 degree C
  6. Finally, dry and pack the final products after sterilization
 

Pudding Powder Description:

Pudding Powder is a compound powder which consist of mainly of konjac powder with carrageenan and various hydrocolloid. The Pudding Powder has the following characteristics:


1. High gel strength with fine toughness.
2. Good mouth feeling.

Granulated sugar 16 ~18%
Citric Acid 0.07 ~0.1%
Milk Powder Proper amount
Essence Proper amount
Water add up to 100%
Method of using Pudding Powder:
  1. Add pudding powder directly into the cold water and agitate evenly.
  2. Add Granulated sugar and milk powder into the solution and heat it to boiling, keep the boiling solution for 5 ~ 10 min.
  3. Filter the solution with 80 ~ 100 mesh
  4. Add Citric acid when temperature of the solution falls below70 Degree C
  5. Pour the solution into the mold and seal it.
  6. Sterilize the mixture for about 15min in water with the center temperature reaches up 85 Degree C
  7. After sterilized, dry and pack the finished products.
